It’s fall, y’all. Time for some of my favorite foods; apple and caramel. I don’t know about you, but I’m a huge fan of caramel apples. I guess it’s a leftover memory from childhood where each year my mom and I would prepare gooey caramel apples. I couldn’t wait for the caramel to dry on my apple and kept sneaking bites. Now that I’m older I have to attend events where I need a recipe that’s a little more “grown up.” I still want my caramel apples. I just enjoy them in this delicious caramel apple brownie cheesecake recipe. It’s a perfect dessert for Thanksgiving and Fall or Holiday parties.
This recipe looks and sounds more complicated than it is. While it takes a while to make, most of the time is cooking and cooling time. I’ve simplified it by replacing the from scratch topping to am easier version, featuring caramel and apple pie filling. I picked up all the ingredients I needed to make my cheesecake at my local ALDI.
Step 1: Toast the pecans in a 350° oven until browned. This should take about 10 minutes. You’ll need to stir them once about halfway through to prevent burning. Once you’ve finished, spread the pecans across the bottom of a springform pan and set aside. Be sure to grease and flour the pan first!
Step 2: Mix thecream cheese, granulated sugar, and vanilla at medium speed until blended and smooth. Add in the 3 eggs, only adding 1 at a time, beating just until blended after each addition. Set this bowl aside.
Step 3. Mix together brown sugar, melted butter, and 1 egg in a large bowl until blended.
Step 4:Stir the flour, baking powder, salt and cinnamon together. Add the flour to the brown sugar mixture, and stir until blended. Add theapples and stir.
Step 5: Spoon the flour/brown sugar mixture into the springform pan, covering the pecans.
Step 6: Spread the cream cheese mixture over the flour sugar mixture.
Step 7: Reduce oven temperature to 325° and bake for an hour an ten minutes OR until a knife inserted into the center comes out clean. (Cooking times can vary depending on the oven.) Remove from the oven, run a knife around the edges of the cheesecake and set aside to cool. When completely cool-about 2 hours- place on a serving plate.
Step 8: Mix the apple pie filling and 1/2 cup caramel topping into a medium saucepan and heat for approximately 5 minutes or until mixture is warm and bubbly. Spread over top of cheesecake. Drizzle additional caramel sauce over pie just before serving.
Caramel Apple Brownie Cheesecake Recipe
Ingredients
- 3/4 cup chopped pecans
