Why we love this Slow Cooker BBQ Chicken Recipe

This is one of my favorite (and most popular) recipes for a reason. Well, several reasons actually! Here are a few:

  • Easy: Toss everything into the slow cooker and let it do all the work for you. A true set it and forget it recipe!
  • BBQ sauce: The BBQ sauce in this shredded chicken recipe is all dressed up with apple cider vinegar, brown sugar and seasonings to really send it over the top.
  • Versatile: There are so many ways to enjoy this BBQ chicken! I love it best when it’s piled high on a bun with some onions and pickles.

Variations on Crockpot Barbecue Chicken

There are so many ways to change up this slow cooker BBQ chicken to suit your needs. I like to add fresh onions and garlic to the pot when I have extra time. Try some of these other variations!

  • Spicy Chipotle: Mixing in chipotle peppers in adobo sauce along with BBQ sauce, sliced jalapeños, and a touch of honey.
  • Hawaiian: Add crushed pineapple (with juice), soy sauce, and a touch of ginger. You can also add some red bell pepper and onion slices for extra flavor.
  • Mustard BBQ: Use a mustard-based BBQ sauce, a bit of honey or brown sugar, and some spices like paprika and cayenne pepper.

Ingredients

  • cups BBQ sauce
  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 pounds boneless, skinless chicken breasts

Equipment

  • Crockpot

Instructions

Notes

  • Know your slow cooker. When cooking 4 chicken breasts like this recipe calls for, I love using my 2.5 quart crockpot — it’s the perfect size and heats up quickly. If you’re cooking more chicken, you’ll likely want to use a 4-6 quart crockpot. Note that if your crockpot is too full, it will take longer to heat and cook.
  • Don’t overcook. I know it can be tempting to leave the chicken in for a longer time, but longer isn’t always better. You really want to be sure you hit the sweet spot between “just enough” and “dry and unappetizing”.
  • BBQ pulled chicken is great as a sandwich with a homemade slaw and pickles! You can also eat pulled chicken in a meal prep bowl, in a wrap, or as a taco.

Storage:Store crockpot BBQ chicken in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 4 months.

We followed this recipe to the letter even using Stubbs BBQ sauce. Is the sauce supposed to be so watery vs thick? Just wondering what we may have done wrong. We have the 2.4 qt crock pot. Everything was done at the 4 1/2 mark cooked on low. Thanks

Yes, the sauce will not be as thick as right out of the bottle since it is mixing with the chicken juices in the crockpot! If you find it’s too watery, you can pour the sauce into a pot on the stove and cook it down a bit!

You can use regular white sugar or try omitting it if the BBQ sauce you used is already sweet!

Is it better to cook chicken on high or low in crockpot? ›

Always cook your boneless skinless chicken breasts on LOW for the best results. I do not recommend cooking boneless chicken breast on HIGH, as it will become very dry and tough, even if you check it early. On high, the chicken turns out drier; I consistently have the best results with low.

How do I keep chicken from drying out in the crockpot? ›

Using a nice, long, low-and-slow cook time helps chicken breasts retain plenty of moisture - but you can certainly opt to add a splash of water or chicken stock to the crockpot if you like!

Why is my chicken tough after cooking in crockpot? ›

In addition, chicken breast has less fat and can become dry (chewy or rubbery) if cooked for too long. Without moisture, the protein fibers in the chicken become elastic.

How long to leave chicken in crockpot on low? ›

Cover your crock pot and cook chicken breasts on low for 6-7 hours or on high for 3-4 hours. Chicken is done when the internal temp reaches 165 degrees F. Use chicken in your favorite recipes. Perfect for shredding!

Do you need to put liquid in the slow cooker when cooking chicken? ›

Adding some liquid to the slow cooker is an essential step, and ensures that the chicken is tender and juicy.

Is 4 hours on high the same as 8 hours on low? ›

A general rule of thumb from Luis Sanchez, senior category manager for the appliance manufacturer Breville: To go from "High" to "Low" (or vice versa), multiply (or divide) the original time by 1.5 to 2.5 hours. And as with the cooking times for specific ingredients, these times are approximate.

For a whole chicken – Place it in your slow cooker breast side down. Cover with the lid and cook on High for around 4-5 hours or Low for 6-8 hours. Step 4: Cook on High for 4-5 Hours or Low 7-8 Hours. Cooking time will depend on the size of your chicken. Chicken is done when the internal temperature reaches 165 F and juices run clear, but also when it's so tender you can shred it with a fork.

Stick to the cook time indicated on your recipe

In general, it's best to stick to the indicated cook time on the recipe you're following. Most slow cooker meals take 8-12 hours on low or 4-6 hours on high, but there are also recipes for slow-cooked meat that take up to 24 hours.

Does chicken get more tender the longer you cook it? ›

But since undercooking it is an even worse fate, many of us overcompensate and pay the price. There's an exception to this cooking rule: dark meat. Unlike chicken breasts, chicken thighs and drumsticks actually become more tender the longer they cook.

When chicken falls apart, is it done? ›

If your chicken has bones in it, the meat will fall off fairly easily if it's fully cooked.

What happens if you don't brown chicken before cooking? ›

Skipping browning isn't a shortcut, but is instead another path to delicious results. Think about chicken soup: Because the chicken isn't browned, it's spoon-tender with a delicate flavor. The same goes for chicken mafe, chicken tinga, khao man gai and so many other classic dishes.

Is it safe to cook raw chicken in a slow cooker on low? ›

Yes, if you use them correctly. The slow cooker cooks foods slowly at a low temperature, generally between 170 and 280 degrees F, over several hours. The combination of direct heat from the pot, lengthy cooking and steam, destroys bacteria making the slow cooker a safe process for cooking foods.

Browning Is Better

You should always brown ground beef or any ground meat in a skillet before adding it to your slow cooker to prevent the meat from clumping up or from adding excess grease to your cooked dish.
