Learn how to make chakli crispy and instantly with this easy Instant chakli recipe. It’s my favorite Indian snack . You can fry or choose to bake these chaklis. Less than 5 ingredients is all you need to make these crunchy buttery murukku at home . These homemade spiral Indian snack tastes just like store-bought chakli. No soaking dal or pressure cooking required to make chakli . The chakli recipe that I am sharing with you today uses rice flour instead . Yes only rice flour needed. No maida or wheat flour makes this chakli recipe gluten-free too . I bet you can’t eat just one !!

For those who do not know what Chakli is , let me give you a brief introduction of the same.

So What is Chakli ?

Chakli is very popular Indian savory snack which is mostly spiral in shape or sometimes long like sticks. Chakli is also known by other names like Chakri in Gujarati or Murukku in South Indian household . It gets a unique fun texture and shape by using a hand-held chakli maker or a murukku maker. These crunchy treats are made in more than one way. Some use all-purpose flour, some use atta (wheat flour) . While some chakli recipes use rice flour or chickpea flour, there are some versions that use a mix of various flours. Some murukku recipes use butter while some like to add yogurt or heavy cream to the dough. These combinations give varied results. Some chaklis are crispy , some are tender . The recipe that I am sharing with you today will give you crispy outcome.

Can I make Chalki without the chakli maker?

Unfortunately not! You need this murukku maker aka chakli maker to make chaklis. You can easily buy this at your local Indian Grocery Store or online. If anyone of you have a hack to make it without the maker do share by commenting below.

Is Chakli healthy for you?

My Husband believes that anything homemade is healthy ! LOL !! Jokes apart , anything that is deep fried isn’t healthy . It is pure indulgence to keep you sane 🙂 If you want to enjoy this Indian snack guilt free then I suggest try the baked version of Chakli.

Is Chakli / Murukku vegan and gluten free snack?

Not all versions of Chakli are vegan and gluten free . As I mentioned earlier , Chakli is made differently in every household . Some use wheat flour, some use malai ( heavy cream). So if you want to indulge in a store bought chakli then you just need to go through the ingredients to make sure it caters your needs. Good news is that today’s recipe is gluten free and has an easy vegan substitute .

We love having chakli during tea time . My son loves it as a school snack . You will always find a jar full of different types of Chaklis in my kitchen . Mostly I buy different varieties from our local Indian store. But whenever I get time I try to make a few. And if it’s Diwali time then Chakli will definitely be on the to do list . It is like our holiday tradition.

Diwali is the most awaited festival of the year for me . I can’t wait to stuff myself with all the sweet and savory snacks that we make for Diwali. Especially chakli , it is one of my favorite snack to munch on . Honestly this is one time of the year where I forget my health goals for a week or two. I mean who doesn’t need a break from eating salad or soups right !! But if you are really serious about not eating fried (good stuff) I have a baked version of chakli mentioned in this post too. And you know what the baked chakli is awesome too !!

Diwali is that time of the year where I miss my family the most. Being away from home saddens me but I can’t change the reality . So to cheer myself I do everything that I would do if I were back in India. Deep Cleaning of the house also known as “Diwali Cleaning” , lighting divas , rangoli, flaunting ethnic outfits, hosting Diwali parties. Making a lot of savory snacks and sweets. Sharing these goodies with close friends in form of holiday gifts , hosting Diwali Parties and indulging in lot of food !!!!

Crispy Chakli recipe / rice flour murukku recipe

Learn how to make chakli crispy and instantly. Fry or bake these chaklis , they are delicious either ways!

Ingredients

  • 2 cups rice flour
  • 2 tablespoon melted butter see notes
  • 2 teaspoon black sesame seeds
  • ½ teaspoon black pepper powder
  • ¼ teaspoon dry mango powder / amchoor optional
  • Enough water to make a soft dough
  • Salt to taste
  • oil for deep frying

Instructions

  • Enough water to make a soft dough

  • In a bowl add in rice flour, black pepper , sesame seeds, salt and give a quick mix with hand or spoon.

  • Now drizzle the melted butter.

  • Rub the rice flour in between your fingers so that the flour is coated well.

  • Add in water slowly to form a soft dough.

  • Let it sit for 10 minutes.

  • Heat enough oil in a frying pan for deep frying. (MEDIUM HEAT)

  • Grease the chakli maker from inside. Grease the Chakli attachment "star" disc too.

  • Now form a log out of the dough as thick as the chakli maker and place it inside the maker.

  • Attach the handle and secure it tightly.

  • You will need a parchment paper or a tray ready for placing the chakli spirals .

  • Now roll the handle of the maker in a circular motion and extrude the dough making spirals.

  • The size of the chakli depends on you. Just make sure that the spirals are not spaced out but an intact coil . Once you are happy with the size of a chakli then stop rolling the handle and secure the end with your finger tip . Similarly make as many spirals as needed.

  • Once the oil is heated , check by dropping a tiny dough piece. If it floats to the top immediately then the oil is too hot and chaklis wont be crispy. The dough should float up gradually.

  • Now Keep making few spirals on the tray / parchment and keep on frying .

  • Do not put more than 6 small chaklis at a time for frying .

  • Fry the chaklis until golden brown , flipping mid way .

  • Place them on a absorbent paper to get rid of excess oil.

  • Let them cool down before eating.

Notes

I have made mini chaklis - finished size approximately 1.5"- 2" diameter. You may make big ones too.

If vegan, use vegan melted butter .

Instead of butter you can use yogurt or heavy cream same amount. I have personally tested these recipes and they turn out great.

If vegan you can use plant based yogurt or coconut cream .

These ingredients will make chakli tender as well as crispy .

How to store chaklis ?

Store in an air tight container in a cabinet. Chakli stays well up to 3 weeks. But I promise they won’t last that long.

This recipe isn’t too spicy . If you like spicy murukku / chaklis like the ones at the store then double the chili powder .

You may add ajwain, ground green chili or red chili powder/ paprika , turmeric to the dough if desired.

Additional Tips for making chaklis -

Do not overcrowd the frying pan to avoid drop in temperature and under cooking. If you feel the chaklis are turning brown quickly then the oil is too hot. Simply switch off the flame for 2 minutes and then resume on low to medium heat. Chaklis firm up only after cooling.

Test the first batch with 2 chaklis then adjust the temperature accordingly.

How to make baked chakli ?

I had baked chakli for last year Diwali and it turned out great.

To the above recipe I added 2 teaspoon of yogurt . Everything remains the same. Grease a baking pan and line up chaklis . Bake in a pre heated oven on middle rack at 350 degress for 25- 30 minutes flipping them mid way. They will be nice golden brown . Remove and cool completely before storing.

Possible problems while making chaklis and solutions –

Chakli’s are breaking while extruding from the chakli maker.

Dough is tough. Try adding a teaspoon or two of water and kneading it . You need a soft dough so that it extrudes well .

Chaklis are not crispy but chewy and soft.

Let chakli cool down and then give it a taste test because it will harden only once it’s cooled.

Chaklis need to be made on medium temperature so that they cook slowly and evenly. High temperature will result in fast cooking with golden brown outside but undone from inside .

The Chakli dough got stuck in the maker.

Always grease the chakli maker from inside as well as grease the attachment.

I can’t get the spiral shape of the chakli 🙁

Making spirals comes with practice . Be patient and keep a steady hand . You can always extrude them long 2 -3 ” long like sticks and then fry. Or another hack is extrude them in a straight line like a rope and then roll it in a shape of coil with your fingers.
