Do you want a yummy and comforting Shepherd’s pie recipe? If so, keep reading.

I am and will always be an Autumn girl. I just don’t care for summer. We don’t have a pool so if we go outside it’s hot and muggy and miserable. Unlike in the fall when there is a crispness to the air that isn’t too cold or too hot but just right. Autumn brings bonfires, pumpkin and apple flavored everything, colorful leaves, hoodies, boots and comfort food. Soups, stews, casseroles, you name it. One of my favorite comfort foods isShepherd’s Pie, also known as Cottage Pie, and I have a quick and easy homemade Shepherd’s Pie recipe for you!

I make this for the kids when the weather takes a cooler turn and they love it! It’s been in the 90’s here in Kentucky but last week we had some rain move through that also brought with it a little cool front. The evening were nice and cool and it felt like fall. I was in paradise! Clay made a big ole’ pot of chili one night. The other cool night, I madeShepherd’s Pie.

My recipe is SO easy. It only calls for a handful of ingredients. One thing that is a must have for me, though, is homemade mashed potatoes. You can use instant, but homemade makes it so much better. For this recipe, I am using a Copper Chef Cookware pan that I was sent for review. It can go from stove top to oven which makes it the perfect pot for thisShepherd’s Pie recipe!

(full, printable recipe below) Ok, first I get my pan on the stove and warming and preheat my oven to 350. I chop up an onion and add that and 2 pounds of ground beef to the pan with salt and pepper to taste and about 1 1/2 – 2 TBSP of Worcestershire Sauce. We use that in just about all meat we cook. It adds a little flavor. When the meat is almost completely browned I add in one can of mixed vegetables (drained) or corn, depending on which the kids are in the mood for. Usually it’s the mixed vegetables to give them more vegetables in their diet. They are picky so I like to add them in to everything they’ll actually eat!

I add it while the meat is still cooking to give the vegetables more flavor without over cooking them. If you like more of a saucy meat mixture, you can add in some homemade or canned gravy to the meat/vegetable mixture. I do this on occasion but for this meal, I left it out. Once the ground beef is completely browned, I put iton low, stirring often to avoid burning, while I make the mashed potatoes. Once the mashed potatoes are ready, I drain the mix and put it back in the pan. (unless I’m using a baking dish, then I put it in that instead)

Then I layer the mashed potatoes on top of the beef/vegetable mix, top with shredded cheese and bake for 20 – 30 minutes or until the cheese isall melted and gooey.

Remove from the oven, let stand about 5 minutes, then serve. It is so warm and comforting on a cool, fall evening.

I LOVE the pan I used. I can use it on any cook top and it can go right into the oven and then to the table like with the Shepherd’s Pie recipe. It came with a steamer tray and fry basket too. So I can make fried chicken, french fries, onion rings, fried pickles, avocado fries, etc. or I can use the steamer tray to make healthy, steamed vegetables. With the Copper Chef pan you can Bake, fry, boil, sauté, steam and braise. I love it! You can actually find all kinds of recipes on thepan’s website too.

I really like the shape of this pan that I used. It is square and a big 4.5 quarts so things fit in it really well. It iscopper colored, ceramic-coated aluminum with a steel induction plate. It heats up fast and it heats up evenly. It also has a glass lid that fits nicely.

Since it can go directly from stovetop to the oven, it was perfect for this Shepherd’s Pie recipe!

Ok, for my mashed potatoes I peel, cut and dice 5lbs of potatoes. I bring these to a boil in salted water and boil until fork tender. Then I drain them and put them in the bowl to my stand mixer. I add butter andmilk. Then I mix (beat) until smooth and creamy. I like mine with as few lumps as possible.

I add the potatoes on top of theShepherd’s Pie and if there are more than needed I freeze the rest in a freezer bag. Then if I’m too tired to make homemade mashed potatoes with a meal, I have some ready to thaw and heat!

FAQs

The easiest way to thicken shepherd's pie filling is by sprinkling a few tablespoons of flour into the ground beef mixture as it cooks before adding it to the baking dish. The starch in the flour will absorb the extra liquid and create a thick gravy.

Classic shepherd's pie is made with ground lamb, gravy, mashed potatoes, and veggies like peas, corn, celery, and carrots. Why is my shepherd's pie soggy? Avoid a soggy pie by simmering the meat mixture for at least 8 minutes. Be sure to cook down the mixture to remove excess moisture.

Why do you put flour in shepherds pie? ›

After this, we cook the ground / mince meat – traditionally lamb but equally delicious made with beef – before adding flour (which thickens the sauce) and gravy flavourings (beef broth, tomato paste, beef bouillon cube, Worcestershire sauce and red wine which is optional).

What is the best thickener for pie filling? ›

Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency. Tapioca starch is preferable for products that will be frozen because it will not break down when thawed. We like tapioca in blueberry, cherry or peach pies.

Why does my potato sink in shepherds pie? ›

Residual moisture from the potatoes will drip into the beef below as it cooks, and too much of it will cause the potatoes to eventually sink. Aside from ridding your potatoes of excess moisture before you mash them, it also helps to cool the beef down, BBC Good Food shares.

Should I put shepherds pie in the fridge? ›

Freshly baked shepherd's pie will keep for about 3 to 5 days in the fridge refrigerate covered with aluminum foil or plastic wrap. It's generally recommended that cooked produce, if cooled quickly enough, will last 3 days safely when stored at or below 5°C. Anything over that and you risk food poisoning.

How do you thicken shepherd's pie without cornstarch? ›

Arrowroot Powder – If you're following the Paleo Diet then Arrowroot Powder is a great alternative to using cornstarch to thicken gravies and sauces.

Should shepherds pie be runny? ›

A good shepherd's – or indeed cottage – pie, needs a solid, but fluffy top: too much milk or butter, and you'll end up with a sloppy puree instead. Make sure you steam the potatoes dry before mashing, and season generously; I like Bareham and Hopkinson's nutmeg as well as the usual salt and pepper.

What to do if mashed potatoes are too moist? ›

You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry. Potato flour and potato starch would work as well. Stir in the thickening agent gradually, about a tablespoon at a time, until the potatoes have reached your desired consistency.

How do you make mashed potatoes moist again? ›

You can use milk, cream, half-and-half, tangy buttermilk, or chicken or vegetable stock to rehydrate your mashed potatoes. Start with ½ cup of liquid for 4 cups of mashed potatoes, and add it gradually so you don't end up with potato soup. Adding extra butter is a good idea, too.

Why is my shepherd's pie greasy? ›

After cooking the beef, onion, and herbs, be sure to drain the grease out of the pan. Otherwise, you will find yourself with a greasy shepherd's pie. Stir well. Especially when adding the flour and tomato paste.

How do you fix salty shepherd's pie? ›

Just Add Acid. Use an acidic ingredient, like vinegar, lemon juice, lime juice, or fresh tomatoes or unsalted tomato sauce, to cut the saltiness of soups, sauces, meat dishes, pastas, salads, and more. A splash should be all it takes to dial back the taste of saltiness.

How hot should shepherds pie be? ›

Stir often to crumble, until cooked through and temperature reaches 160°F on a food thermometer.

What to do if your pie is too runny? ›

The best way to thicken runny apple pie filling before baking it is to add some cornstarch, tapioca starch, or flour to your mix. To fix a runny pie that's already been baked, simply let it cool to see if it will congeal naturally. If not, you can stick it back in the oven for a bit longer.

What is the best thickener for meat pies? ›

FINO PIE THICKENING is a balanced blend of cereals and starches especially designed for thickening and stabilising pie meat.

Is cornstarch or flour better for thickening pie? ›

Which one you use is a matter of personal preference. Cornstarch makes for a shiny, glossy filling. A little goes a long way because it has twice the gelling power of flour. Flour thickens nicely but leaves more of a matte finish.
