The Best Way to Cook Chili:

Slow Cooking chili is a classic way to cook chili. It’s the easiest chili because you can set it and forget it and this is how the award-winning chilis are achieved. The low and slow cooking process melds the flavors of the chili seasoning into every bite and the beef becomes so tender, juicy, and irresistible. You can slow cook on low for 6-8 hours or on high heat for 3-4 hours.

Ingredients for Slow Cooker Chili:

  • Ground Beef – no other protein does it quite like beef and Ground Beef tastes amazing. We use lean (90/10 or 93/7) to eliminate the need to spoon out excess fat. If yours has a higher fat content, you can spoon out the excess fat when it renders in the skillet.
  • Onion – we love a generous amount of onion because it adds amazing sweet notes to the chili and disappears into the chili as it slow cooks.
  • Beans – you can change up the beans based on what you have on hand, but the classic beans for chili are kidney beans (we love dark red), and black beans. Be sure to rinse and drain the beans in a colander for the best chili consistency and color.
  • Tomatoes & Tomato Sauce – We love the combination of canned diced tomatoes (with their juice) as well as tomato sauce to give the chili a saucy consistency with great texture. For added flavor, we add a can of diced tomatoes and green chilis.
  • Chili Seasoning – we make a simple homemade blend with chili powder, cumin, garlic powder, oregano, salt, and pepper.

Do you Prefer a Spicy Chili?

To keep it kid-friendly, this classic chili is mild and not spicy. If you prefer a spicy chili, you can either add hot sauce to your bowl when serving or if you want the entire batch to be spicier, add an extra tablespoon of Chili Powder and 1/4 to 1/2 tsp of Cayenne Pepper to give it a spicy kick.

How to Make Slow Cooker Chili:

Making chili in the slow cooker doesn’t get any easier. It’s as simple as browning the beef and onions then adding all of the canned ingredients to the slow cooker and turning it on. If you have a multicooker with a slow cooker function, you can saute and slow cook all in the same pot.

  1. SAUTE the beef and onions in a skillet then add garlic and seasonings to the pan.
  2. TRANSFER the beef mixture to a 6 Qt Slow Cooker.
  3. ADD REMAINING INGREDIENTS – rinsed and drained beans, diced tomatoes with their juice and tomato sauce.
  4. SLOW COOK – cover and set slow cooker on low 6-8 hours or on high 3-4 hours then season more to taste if needed.

Our Favorite Chili Toppings:

We love to serve this family-style where everyone can build their own chili bowls with the toppings they love. Toppings can vary based on what we have in the fridge, but these are our favorite toppings for chili –

  • Cheese – mild cheddar is the classic choice, but Mexican shredded cheese works equally well
  • Onion – chopped green or red onion adds a fresh pop of color and flavor
  • Avocado – because we can’t help putting avocado on everything, especially chili.
  • Cilantro – for garnish and adding fresh flavor
  • Sour cream – balances the dish (especially great when chili is served over a baked potato)
  • Sliced jalapenos – you can use any hot pepper for a spicy kick

How to Serve Chili:

Chili keeps really well in the refrigerator so we love to get creative with leftovers. There are so many ways to serve classic chili and really it can be served almost any time of day. Some of our favorites include:

  1. Chili Cheese Dip – Sprinkle chili with cheddar cheese and serve as an appetizer with tortilla chips.
  2. Chili Dogs – Top a hot dog with chili and shredded cheese to transform it into a chili cheese dog.
  3. Chili Stuffed Baked Potatoes – topping a baked potato with hot chili is a delicious gluten-free option and fun way to serve a crowd.
  4. In a Bowl – loaded with all of the toppings and tortilla chips or pita chips on the side (this is our family favorite)!

FAQs

How long can chili cook in slow cooker? ›

The Best Way to Cook Chili:

The low and slow cooking process melds the flavors of the chili seasoning into every bite and the beef becomes so tender, juicy, and irresistible. You can slow cook on low for 6-8 hours or on high heat for 3-4 hours.

What liquid is best for chili? ›

Chili cooks low and slow, so you need enough liquid to tenderize the meat and keep everything from drying out. That liquid should also add flavor to the chili, so use chicken, beef, or vegetable stock, or beer.

Should chili be thick or soupy? ›

Traditionally, we expect a robust, spicy base, meat and/or beans, perhaps some bonus veggies, and a thick, rich consistency. Unlike soups, which are brothy, or even bisques, which are creamy yet thinner, chili is meant to be more stew-like; it's a definite stick-to-your-ribs creation.

Can you overcook chili in a slow cooker? ›

Yes, but it would take a while. I have cooked this chili for 9 hours on low and it was delicious but ever-so-slightly burnt on the top. The tomatoes contain sugar, which caramelizes in the slow cooker, and will eventually burn if it cookes for too long. Anything longer than 10 hours on low is risky.

Is 3 hours in slow cooker enough? ›

How long should I cook a slow cooker recipe? If a dish usually takes: 15-30 mins, cook it for 1-2 hours on High or 4-6 hours on Low. 30 mins – 1 hour, cook it for 2-3 hours on High or 5-7 hours on Low.

What adds the most flavor to chili? ›

Cocoa powder, bacon, cinnamon, ground coffee and tomato paste will all add a rich sweet & salty flavors that are sure to surprise and delight. Warming spice blends, like Garam Masala, Ras el Hanout or Baharat are another simple and delicious way to add layered flavors to this simple one-pot meal.

Most Common Chili Spices. Cumin, Chile Powders, and Paprika are the most common spices in chili followed by garlic, onion, coriander, Mexican oregano, and bay leaves. These ingredients can be combined to create a savory and well-balanced pot of top notch comfort food.

What is the trick to a good chili? ›

Cook it long enough

Chili recipes need time for flavors to meld and come together, and collagen-rich meat (like chuck roast or ground beef) needs 90 minutes to two hours to fully break down and become tender. If you don't have time for a long simmer, try using a slow cooker or making it the day before.

Do you cook onions or meat first for chili? ›

In a large pot over medium heat, heat the oil and add the onions, garlic, and red pepper. Cook, stirring frequently, until softened, 4 to 6 minutes. Add the beef and increase the heat to high.

Is it better to put chicken or beef broth in chili? ›

Actually, I regard chicken broth as preferable. Think of it this way: you have a pot full of big, strong, even overwhelming flavors (beef, tomatoes, chiles, onions, cumin.) Adding chicken broth—instead of more beef flavor—slightly lightens and makes your chili flavors a bit more complex.

What does cinnamon do for chili? ›

Cinnamon. The beauty of ground cinnamon is that it brings a warmth to your chili, without being spicy. It works well with other flavors commonly found in chili (like tomato, cumin and chile powder) so you only need a little bit to achieve the desired balance.

Does tomato paste make chili thicker? ›

Not only will tomato paste add a tangy flavor to the dish, but it will also act as a thickening agent. For this purpose, you can use homemade or store-bought tomato paste. Add 1 can of the paste to your pot of chili, stir the mixture, and let it cook on medium heat for about 30 minutes.

Why put cornmeal in chili? ›

Cornmeal is one of our go-to thickening agents for chili. Unlike all-purpose flour, this Southern pantry staple adds a subtle earthy flavor to the chili in addition to thickening it up. You can use white or yellow cornmeal that is fine to medium-grain.

How to thicken chili in crockpot? ›

Though you could use flour or cornstarch, you'll stay closer to a chili flavor profile if you either mash some of the beans (assuming it's a chili with beans) or stir in some masa flour (fine cornmeal) and allow the chili to cook a while longer. Flour slurry. Equal parts of flour (or corn starch) and water.

Can I leave chilli in the slow cooker all day? ›

Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.

Can I let chili simmer all day? ›

If you have time to make it the day before or early in the day and can let it simmer all day, your chili will go from good to AMAZING. Simmering all day allows the meat, beans, and onions to soften and the flavors to meld together. There's just no substitution for chili that is cooked low and slow all day!

Can you cook chili for 6 hours? ›

Add the garlic, yellow onion, tomatoes with juices, chili powder, oregano, cumin, salt, pepper, cornmeal and stock to the slow cooker and stir to blend. Cover and cook for 6 hours on low according to the manufacturer's instructions. Skim the fat off the surface of the chili.

Is it good to cook chili for a long time? ›

Cooking chili low and slow is the way to go

Although the internet abounds with recipes for quick-cooking chilis that take as little as 20 minutes (via MyRecipes), this stewed dish truly benefits from a longer cook time that will gently coax all the flavors out of the meat, legumes, vegetables, and spices in the recipe.
