Ever wondered what sweet chili mayo is made of? My homemade dipping sauce consist of mayonnaise, sweet chilli sauce, sour cream, salt and black pepper.
You are probably wondering why sour cream is on the list. Well, the first time I made this sauce at home, I had some sour cream that needed using up and since mayonnaise complements sour cream, I added it and I haven’t looked back since.
The addition of sour cream to sweet chili sauce mayonnaise sauce makes it extra creamy, you could almost eat the whole dip with a spoon.
That said, you can omit it when making yours as the aim of this recipe is not to leave you out of pocket but to make use of what you already have in your pantry.
Ingredients
Mayonnaise: you can use full fat or low fat mayonnaise.
Sweet chili sauce: this is mostly sold in supermarkets or Asian stores. You can use any favourite brand of choice. If time is not of the essence, then you may want to make your own sweet chili sauce from scratch
Sour cream: full fat or low fat would work in this recipe
Salt and freshly cracked black pepper to taste
How to make sweet chili mayo
To a mixing bowl, add mayonnaise, sweet chili sauce, sour cream, salt and pepper and whisk to combine. Cover with a cling film or plastic bag and place in the fridge for at least 30 minutes for the flavours to develop. You can use it immediately if time is of the essence.
Tips
If the sauce is too thick, you can add a splash of water to lighten it. Taste and adjust seasoning according to preference.
This recipe is just a guideline, feel free to swap things around to suit you. If you like more sweet chili in your dip then by all means add as much as you need.
Add freshly squeezed lime or lemon juice for a bit of zingy taste.

Yes, you can make this dipping sauce ahead for up to 7 days and keep in the fridge covered in an airtight container until needed. Make sure to check for expiry of the ingredients used to be sure they are in date for the intended storage period.
