  • 1/2 cup of sugar
  • 1 teaspoon of vanilla
  • A pinch of salt
  • One cup of strong coffee, chilled

1. Start with the vanilla base by combining the soymilk, sugar, vanilla and salt in a bowl. Chill the mixture in the fridge overnight.

2. The next morning, pour your coffee into the mixture before churning.

Ingredients:

  • 6 ounces of extra firm tofu (Homemade Laura Soybean Tofu)
  • 1 cup of soy milk
  • 1 tablespoon of hazelnut-flavored syrup
  • 4 teaspoons of instant espresso powder
  • 1 teaspoon of vanilla extract
  • 2/3 cup semi-sweet chocolate chips

1. Pour the tofu, soy milk, syrup, espresso powder and vanilla extract into a blender. Puree the combination until it is smooth.

2. While the mixture is blending, melt the chocolate chips. Pour in the melted chocolate into the blender and puree until the chocolate is incorporated evenly throughout the mixture.

3. Pour the mixture into your ice cream maker and follow the manufacturer’s instructions or try the freeze and stir technique.

4. Let the ice cream harden for 4 hours in the freezer before serving.

4. Vanilla Ice Cream

Ingredients:

  • 2 cups of Laura® Soybean Soy Milk
  • 2 cups of Your favorite creamer
  • 1/2 cup of honey, agave or sugar
  • 1 vanilla bean or two teaspoons of vanilla extract
  • 2 tablespoons of cornstarch or arrowroot

1. Whisk together the soy milk, creamer and honey, agave or sugar in a saucepan.

2. Slice the vanilla bean, scoop out the seeds and add the seeds and pod to the saucepan mixture. [If you are using vanilla extract, skip this step.]

3. Heat the mixture at medium-high heat and simmer for 5 minutes.

4. Remove the saucepan from the heat. [If you are using vanilla extract, whisk it into the mixture after removing the saucepan from the burner.] If you want a dash of fruitiness, such as raspberry or mango, add in the desired flavor here.

5. Remove about 1/4 of the mixture from the pan. Whisk it with the cornstarch or arrowroot.

6. Replace the 1/4 mixture back into the pan. Cover the pan to let the mixture infuse for 20 minutes.

7. After the mixture has cooled completely, process it in an ice cream maker per the manufacturer’s instructions or use the freeze and mix method.

5. Vegan Oreo Ice Cream

3. Place the mixture in the fridge for 4 hours. If you are not using an ice cream machine, place it in the freezer, instead.
